Italy is more than a map; it is a collection of stories told through the hands of those who keep tradition alive. This March, Villa Firenze invites you to leave the everyday behind and join us for Cuore d’Italia—a 13-day celebration of the artistry, geometry, and soul of Italian stuffed pasta.

Our chefs have spent weeks perfecting the intricate folds, pinches, and braids that define Italy’s regional identities. From the spicy shores of the South to the snow-capped peaks of the North, every plate is a destination.

THE JOURNEY BEGINS…

The Bold South: Calabria

We begin our voyage in the sun-drenched hills of Calabria. Experience our Sacchetti, or “Beggar’s Purses.” These hand-gathered pouches are cinched at the top to lock in a fiery heart of spicy Soppressata, ’Nduja, and smooth cream cheese, served in a silky rosé sauce with a signature drizzle of Calabrian chili oil.

The Island Tradition: Sardinia

Next, we cross to the rugged island of Sardinia to witness the masterpiece of pasta craft: the Culurgiones. Each piece is sealed with the spighitta—an intricate hand-stitched wheat-ear braid. We’ve filled these with a refined blend of artichoke and Parmesan, resting on a lush cream sauce with the scent of white truffle.

The Heartland: Emilia-Romagna

Our tour moves to the culinary capital of Italy for the Cappelletti. Modelled after medieval “Little Hats,” these are hand-folded into a classic navel shape. Inside, you’ll find a delicate traditional filling of spinach and ricotta, tossed in an aromatic sage-infused butter sauce.

The Golden Hills: Piedmont

In the misty Northwest, we find the Agnolotti del Plin. These tiny, rectangular envelopes are made using a signature “pinch” (plin) to create a pocket for the sauce. We have elevated this Piedmontese staple with a luxurious seafood stuffing, served over a rich, velvety lobster bisque with sweet cherry tomatoes.

The Celebration: Lombardy

Before we reach our final destination, we stop in Lombardy for the Caramelle. Wrapped like festive candies, these spinach-infused pasta twists are a gift for the palate. Stuffed with savoury mushroom and slow-braised beef, they are paired with a vibrant roasted red pepper sauce and the crunch of golden fried onions.

The Sweet Finale: The Alps

No journey is complete without a parting gift. Our Choco-Mezzalune is a cocoa-infused “Half-Moon” pasta, deep-fried to a golden crisp. Stuffed with molten Nutella and served with cool vanilla gelato, it is the perfect end to your Italian pilgrimage.
